The beginning

Today is the beginning of a leaving a healthy eating legacy for my family. I've been hooked on the series "Food Revolution" with Jamie Oliver and realized I need to do something about it. I always wanted to be those weird families that eat things most people never heard of. I wanted my kids to be exposed to so much more than chicken nuggets and pizza. I was a vegetarian for 3 years and a vegan for a year of that. I've fallen prey to the food in America, but I'm vowing to change that now!
This blog is a way for me to stay accountable for healthy eating, to track recipes and ideas, and to share with others, changing one family at a time.

My family consists of a 21 month old little girl named Lily and a one month old named Carly. My husband, Josh, is in medical sales and has put on some baby weight since we got married. I've just had my second child, and I need to get back in "wedding shape" before this summer. I don't strive to be a hot mom, but a healthy one. Lily is on the right track so far. She loves cooked and raw spinach, brussel sprouts, egg whites, quinoa, lettuce, green beans, and more. It's amazing what this girl won't eat...she prefers not a lot of sugar, although she's not afraid to try it. Her shut off point is pretty quick when it comes to sugary substances, which is more than I can say. My husband and I have been known to polish off an entire batch of cookies in less than 24 hours. Not good!

So, to wrap up, I will be posting daily (fingers crossed) what my family is eating. I may or may not have pictures, but I'll include some sort of recipe. I'm not promising 100% healthiness in my meals, but I'm going to try my best to stay on track. Please feel free to send me any recipes you may want to include, too. (I'm just starting this whole blog thing, so bear with me.)

I'm ready to make a legacy for my children in their eating habits...wanna join me? Happy Healthy Eating!!

**Just for me to remember...
Me: Size 6, ~130 lbs., gross loose belly, no muscle tone
Josh: Size unknown, ~220 lbs. (he'll kill me for posting this)
